Yield:  8 servings

Caramelized Onion Baked Beans

The caramelized onions provide a sweet decadent taste without any added sugar!

  • 1 teaspoon olive oil
  • 1 large white onion, cut into thin slices
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 2 (15.8-ounce) cans great northern beans
  • 1 (15.8-ounce) can black beans
  • 1 (28-ounce) can crushed roma tomatoes, low sodium
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons cider vinegar
  • 1 teaspoon celery salt
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon hot sauce (optional)

Preheat the oven to 350 degrees Fahrenheit.  Heat olive oil in large Dutch oven or similar pot that has a lid.  When hot, add in sliced onion and reduce heat to medium.  When softened, add in balsamic vinegar and garlic.  Continue to cook, reducing heat until onions have caramelized and turned golden brown, approximately 30 minutes.  Add in remaining ingredients and mix well.  Bake covered for 1-1/2 hours to two hours until nicely thickened and hot.  Adjust seasonings if desired.
