Black Bean Burgers
These burgers are so hearty, even the meat eater in the house won't feel left out!
Yield: 6 servings
Ingredients
- 2 ea. 15-ounce cans of black beans
- ½ large white onion, diced
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- ¼ teaspoon oregano
- ¼ teaspoon paprika
- ¼ teaspoon cayenne pepper
- ½ cup red peppers
- ½ package frozen spinach (5 ounces), squeezed dry
- 1/3 cup diced tomatoes (drain off any juice)
- ½ cup Asiago or other low-fat cheese
- 1 egg
- ¼ cup fresh chopped cilantro
- 1 tablespoon Dijon mustard
- Salt and pepper
- 1½ tablespoons olive oil
Procedure
- Preheat oven to 425°F.
- In a colander, rinse black beans with cold water.
- Heat a medium sauce pan over medium-high heat.
- Add in one tablespoon of olive oil.
- Saute onions until fragrant and translucent.
- Add in spices: garlic, cumin, coriander, oregano, paprika, cayenne pepper, and red peppers.
- When nicely incorporated, add in spinach and cook until heated throughout.
- Remove from heat and set aside.
- In bowl or food processor, mash half the beans to a thick paste.
- Stir in the remaining beans, spinach mixture, low-fat cheese, egg, cilantro, Dijon mustard, salt, and pepper.
- Mix well and form into six patties.
- Brush patties lightly with olive oil and cook at 425°F for approximately 10 minutes.
- Serve on whole-wheat buns with low-fat guacamole, fresh tomatoes, greens, and baked spicy fries.
