Low-Fat Guacamole

A lighter and lower-fat version of most guacamole. This tasty alternative contains a heaping helping of heart-healthy omega-6 fatty acids.

Yield: 6 servings

Ingredients

  • 1 large ripe avocado
  • 1/2 cup chopped cilantro
  • 1/2 diced tomato (juice drained off)
  • 1/3 cup chopped green onion
  • 2 teaspoons ground cumin
  • 2 tablespoons fresh lime juice
  • 1/3 cup low-fat sour cream
  • 1/2 teaspoon salt and pepper

Procedure

  1. Mash avocado with fork or place in food processor and pulse until lightly blended. (You want avocado to remain somewhat chunky).
  2. Add in remaining ingredients and mix well.
  3. Serve immediately.

Note: Guacamole oxidizes quickly. To prevent oxidization, place a thin layer of pured tomatoes on top and store in refrigerator covered or sprinkle generously with lemon juice.
