Salmon Cakes

Yield: 6 servings

Ingredients

  • 1 pound skinless salmon cooked to medium rare
  • 1 tablespoon reduced-fat mayonnaise
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon sesame oil
  • 1 egg
  • ¼ cup chopped green onions
  • ¼ cup diced red peppers
  • ¼ cup panko crumbs (or any other fine breadcrumbs, whole wheat if possible)
  • ¼ teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1 tablespoon olive oil
  • 1 tablespoon black sesame seeds

Procedure

  1. If salmon is uncooked, place in 375°F oven and cook for 10 minutes.
  2. Lightly shred cooked salmon with fingers keeping it fairly chunky.
  3. Transfer salmon to a medium bowl.
  4. Add in remaining ingredients: mayonnaise, cilantro, sesame oil, egg, green onions, red peppers, panko crumbs, salt, and pepper.
  5. Form mixture into six patties.
  6. Place on parchment lined sheet pan.
  7. Brush each patty with olive oil and sprinkle with black sesame seeds.
  8. Place under broiler and broil 4-6 minutes or until lightly browned.
  9. Remove from oven and serve on whole wheat buns with fresh greens.

Note: This is a tasty and healthy way to use up extra salmon.
