Ingredients
- 1 pound skinless salmon cooked to medium rare
- 1 tablespoon reduced-fat mayonnaise
- ¼ cup chopped fresh cilantro
- 1 teaspoon sesame oil
- 1 egg
- ¼ cup chopped green onions
- ¼ cup diced red peppers
- ¼ cup panko crumbs (or any other fine breadcrumbs, whole wheat if possible)
- ¼ teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 1 tablespoon olive oil
- 1 tablespoon black sesame seeds
Procedure
- If salmon is uncooked, place in 375°F oven and cook for 10 minutes.
- Lightly shred cooked salmon with fingers keeping it fairly chunky.
- Transfer salmon to a medium bowl.
- Add in remaining ingredients: mayonnaise, cilantro, sesame oil, egg, green onions, red peppers, panko crumbs, salt, and pepper.
- Form mixture into six patties.
- Place on parchment lined sheet pan.
- Brush each patty with olive oil and sprinkle with black sesame seeds.
- Place under broiler and broil 4-6 minutes or until lightly browned.
- Remove from oven and serve on whole wheat buns with fresh greens.
Note: This is a tasty and healthy way to use up extra salmon.
