Berry Crisp with Frozen Yogurt

An easy and delicious dessert that showcases summer's gorgeous berries.

Yield: 8 servings

Ingredients

  • 6 cups fresh berries, assorted
  • ¼ cup honey or maple syrup
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon grated lemon rind
  • 4 tablespoons fresh lemon juice (approximately 3 lemons)
  • 1/3 cup whole wheat flour
  • 1/3 cup regular oats
  • ¼ cup packed brown sugar
  • 3 tablespoons butter
  • 1 teaspoon ground cinnamon
  • 1 quart non-fat churned frozen yogurt (optional)

Procedure

  1. Preheat oven to 350°F.
  2. Put the first seven ingredients in a bowl. Combine well and then place in 8-by-10-inch baking pan.
  3. To prepare the topping, combine flour and next four ingredients in a small bowl and toss with a fork until well-blended.
  4. Sprinkle topping evenly over berry mixture.
  5. Bake at 350°F for 40 minutes or until bubbly.
