Mango and Cherry Tomato Salad

Yield: 8 servings

Ingredients

  • 3 cups cherry tomatoes (cut in half)
  • 2 large mango (approximately 3 cups) peeled and diced
  • ½ cup finely chopped red onion (optional)
  • 1 bunch of basil, finely torn or chiffonade
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Procedure

  1. Toss tomatoes with mango in a large bowl.
  2. Add in remaining ingredients and stir to mix well.
  3. Season with salt and pepper.

Note: This salad is chock full of vitamins and minerals, lycopene, vitamins C, E, K, and B6, and folate. It's super high in beta carotene. Kids love the sweet taste and can't get enough of it.
