Scrambled Egg Burritos

Ingredients

  • 3 organic eggs
  • 2 tablespoons organic milk
  • 1-2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 organic red bell pepper, chopped
  • 1 small package (8 ounces) organic button mushrooms, sliced
  • Salt and pepper to taste
  • ¼-½ pound fresh spinach
  • 2 whole grain tortillas
  • Grated organic cheddar cheese (optional)

Procedure

  1. Whisk eggs and milk together in bowl.
  2. Scramble in a lightly buttered pan.
  3. Sauté onions until tender in a sauté pan lightly coated with olive oil.
  4. Add mushrooms and peppers.
  5. Season with salt and pepper.
  6. Sauté until tender but not soft.
  7. Place spinach in sauté pan over sauté mixture.
  8. Cover and allow to steam until spinach begins to wilt.
  9. Grate cheese inside tortilla shell.
  10. Cover with scrambled eggs and sautéed vegetables.
  11. Roll and enjoy!
