Spiced Roast Turkey Breast

Ingredients

  • 1 turkey breast
  • 1 garlic clove
  • 1 tablespoon each, whole spices: cumin, coriander, fennel seed
  • ½ teaspoon kosher salt
  • 1 tablespoon black pepper
  • 2 tablespoons extra virgin olive oil

Procedure

  1. Lightly toast spices in medium-sized sauté pan; let cool.
  2. Grind spices and transfer to small bowl with the pepper.
  3. Chop garlic clove and rub into a paste; mix in salt.
  4. Combine with spice mixture.
  5. Rub mixture over turkey breast.
  6. In large sauté pan over medium-high heat, add olive oil and sear turkey, skin side down, for just a few seconds.
  7. Transfer to oven set to 350°F for 20 minutes.
  8. Remove and set aside to rest at least 5 minutes, skin side up, and covered with foil.
  9. Slice against grain and serve.
