Spiced Roast Turkey Breast
Ingredients
- 1 turkey breast
- 1 garlic clove
- 1 tablespoon each, whole spices: cumin, coriander, fennel seed
- ½ teaspoon kosher salt
- 1 tablespoon black pepper
- 2 tablespoons extra virgin olive oil
Procedure
- Lightly toast spices in medium-sized sauté pan; let cool.
- Grind spices and transfer to small bowl with the pepper.
- Chop garlic clove and rub into a paste; mix in salt.
- Combine with spice mixture.
- Rub mixture over turkey breast.
- In large sauté pan over medium-high heat, add olive oil and sear turkey, skin side down, for just a few seconds.
- Transfer to oven set to 350°F for 20 minutes.
- Remove and set aside to rest at least 5 minutes, skin side up, and covered with foil.
- Slice against grain and serve.
