Grilled Portobello Burgers

Yield: 4 servings
Ingredients
- 2 tablespoons Worcestershire sauce
- 2 teaspoons honey mustard
- ¼ teaspoon black pepper
- 2 garlic cloves, minced
- 4 large Portobello mushroom caps
- 1 red bell pepper, cut into 4 wedges
- 4 (½-inch-thick) slices onion
- Cooking spray
- 8 (½-ounce) slices reduced-fat sharp cheddar cheese
- ¼ cup ketchup
- 2 tablespoons prepared mustard
- 4 (1½-ounce) hamburger buns
- 4 Bibb lettuce leaves
- 8 sandwich-cut bread-and-butter pickles
Procedure
- Prepare the grill or broiler.
- Combine the first four ingredients in a small bowl and brush both sides of the mushroom caps with the sauce mixture.
- Place the bell pepper on the grill rack or broiler pan coated with cooking spray and grill 10 minutes or until blackened.
- Place the mushroom caps, top side down, and the onion slices on a grill rack coated with cooking spray and grill 4 minutes.
- Turn the mushrooms and onion slices over and grill 4 minutes or until tender.
- Next, place two cheese slices on top of each mushroom cap. Cover and grill 1 minute or until cheese melts.
- Place each grilled mushroom on a bun with ketchup, mustard, onion rings, bell pepper, lettuce, and pickles … and enjoy!
