Grilled Portobello Burgers

Ingredients

  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons honey mustard
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced
  • 4 large Portobello mushroom caps
  • 1 red bell pepper, cut into 4 wedges
  • 4 (½-inch-thick) slices onion
  • Cooking spray
  • 8 (½-ounce) slices reduced-fat sharp cheddar cheese
  • ¼ cup ketchup
  • 2 tablespoons prepared mustard
  • 4 (1½-ounce) hamburger buns
  • 4 Bibb lettuce leaves
  • 8 sandwich-cut bread-and-butter pickles

Procedure

  1. Prepare the grill or broiler.
  2. Combine the first four ingredients in a small bowl and brush both sides of the mushroom caps with the sauce mixture.
  3. Place the bell pepper on the grill rack or broiler pan coated with cooking spray and grill 10 minutes or until blackened.
  4. Place the mushroom caps, top side down, and the onion slices on a grill rack coated with cooking spray and grill 4 minutes.
  5. Turn the mushrooms and onion slices over and grill 4 minutes or until tender.
  6. Next, place two cheese slices on top of each mushroom cap. Cover and grill 1 minute or until cheese melts.
  7. Place each grilled mushroom on a bun with ketchup, mustard, onion rings, bell pepper, lettuce, and pickles … and enjoy!
