Chocolate Pudding with Toppers

Yield: 6 servings

Pudding

  • ½ cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2½ cups 1% low-fat milk
  • ½ cup low-fat vanilla yogurt
  • 1 teaspoon vanilla extract

Toppings (Optional)

  • Chopped nuts
  • Granola
  • Fresh fruit such as blueberries, raspberries, sliced bananas, sliced strawberries
  • Whipped light cream

Procedure

  1. Whisk together the sugar, cocoa, cornstarch, and salt in a medium saucepan.
  2. Gradually whisk in the milk until well blended.
  3. Place over medium-high heat and bring to a simmer, stirring constantly.
  4. Reduce the heat and continue to simmer and stir gently until the mixture thickens slightly, about 2 minutes.
  5. Remove from the heat and stir in the yogurt and vanilla.
  6. Spoon the mixture into six individual serving bowls.
  7. Cover with plastic wrap or wax paper (to prevent a film from forming) and chill for at least 1 hour.
  8. Sprinkle with toppings as desired and serve.
