Sweet Salmon with a Kick

Yield: 4 servings

Ingredients

  • ¼ cup rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon ground red pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon five-spice powder
  • 4 (6-ounce) salmon fillets
  • Cooking spray
  • ¼ cup sliced green onion

Procedure

  1. Preheat the broiler.
  2. Combine the rice vinegar, honey, and soy sauce in a small bowl and stir with a whisk. Set aside ¼ cup of the vinegar mixture.
  3. Combine the pepper, salt, and five-spice powder and rub evenly over the skinned side of the fillets.
  4. Place the salmon, skin side down, on a broiler pan coated with cooking spray.
  5. Broil 16 minutes or until the fish flakes easily when tested with a fork, brushing frequently with the vinegar mixture.
  6. Place the reserved ¼ cup vinegar mixture in a small microwave-safe glass bowl. Microwave on high for 20 seconds or until bubbly.
  7. Drizzle the mixture over the fish and sprinkle with onion.
